It is produced from selected grapes which were exsiccated and aged in oak barrels for at least 4 years.
The “Caluso Passito” DUS is an enchanting wine that may be enjoyed daily at any time. You may whish to have a sip in the morning like our fathers used to do in the old times. Alternatively, you may try a little as an aperitif or enjoy it with your dessert. Its taste is delicate and sweet with a moderate dry touch. It can also be tasted in the evening and at night to reconcile your sleep.

Vine: Erbaluce di Caluso
Soil: essentially made of glacial sand with subordinated clay horizons, together with the presence of cobble-stones responsible for regulating soil temperatures throughout the year.
Processing: best and healthy grapes are first selected in the field, then they are deployed indoor, onto hurdle shelves (within an aired environment) where they are exsiccated until March. During this span of time they are systematically checked to prevent mould growth. However, the so called “noble mould” (Botritis) is allowed to develop during the middle of January. In March grapes are separated from their stalks and then are carefully squeezed. After fermentation, when the wine reached 14-15 percent in alcohol, it gets stored in oak barrels for at least 4 years. Only after this span of time the wine can be named “Caluso Passito”.
Color: from golden yellow to brownish yellow.
Fragrance (Scent, perfume): Delicate and typical, bearing dry fruits including prunes and figs.
Flavor: sweet and harmonic, full and velvet like.
Alcohol: 15 %
Serving Temperature: 14-15 degree Celsius (59° F).
Best food matches and cuisine: best for pastry and tasty cheeses.
Storage: in a cool environment with constant temperatures not higher than 18-20 °C (66° F). It can be aged for many years.
